Chimi Easy!

Between my daughter's homework, dance classes and running a growing and successful business, when I find myself strapped for time I look for simple, quick, nutritious & most importantly delicious ways of getting dinner on the table. Let's face it, if it doesn't taste good, no one will eat it!

This sauce is one of my absolute favorites as it adds a lot of flavour to pretty much anything, seriously it does. Chimichurri is a beautiful,emerald green sauce which hails from the beautiful Argentina. It's supposed to be used as a dipping sauce for barbecued meats, ay caramba!!
It's made with parsley, onions, garlic, vinegars and oil, which equates to heavenly breath :-).

This time around I used it for a quick pasta side dish. Cook pasta as directed. I drained it and added a couple if tablespoons of chimichurri and mayonnaise (mayo will balance out the chimi as it has a strong flavour, a little goes a long way) added some chopped parsley, salt & pepper to taste.

You can add fresh spinach for added nutrition as well.

I paired it with roasted chicken & carrots.

January and February have come and gone in a flurry of snow and wind and yet the snow and wind are still here! Spring is just around the corner, I hope!
